Apple Orchard Pancakes
Makes about 20 pancakes
Ingredients
2-1/2 cups all-purpose flour
3/4 cup packed brown sugar
2 teaspoons baking powder
1-1/4 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1-1/2 cups milk
1/4 cup vegetable oil
1 teaspoon butter
3/4 cup chopped dried apples
1/2 cup golden raisins

1. Combine flour, brown sugar, baking powder, cinnamon, baking soda and salt in large bowl.
2. Beat eggs in medium bowl; stir in milk and oil. Add egg mixture to flour mixture; stir until almost blended. Stir in apples and raisins.
3. Lightly coated griddle with butter. Heat griddle over medium heat until hot. Pour about 1/4 cup batter onto griddle for each pancake. Cook until bubbles form in batter and bottom of pancakes are lightly browned; turn and cook 2 minutes or until brown and cooked through. Repeat with remaining batter. Serve pancakes with syrup, if desired.
