Crunchy Apple Salsa with Grilled Chicken

Crunchy Apple Salsa with Grilled Chicken


Ingredients
2 cups Washington Gala apples, halved, cored and chopped
3/4 cup (1 large) Anaheim chili pepper, seeded and chopped
1/2 cup chopped onion
1/4 cup lime juice
  Salt and black pepper to taste
  Grilled Chicken (recipe follows)
   
Combine all ingredients except chicken and mix well; set aside to allow flavors to blend about 45 minutes. Prepare Grilled Chicken. Serve salsa over or alongside Grilled Chicken.
 
Grilled Chicken   Marinate 2 whole boneless, skinless chicken breasts in a mixture of 1/4 cup dry white wine, 1/4 cup apple juice, 1/2 teaspoon grated lime peel, 1/2 teaspoon salt and dash pepper for 20 to 30 minutes. Drain and grill over medium-hot coals, turning once, until chicken is no longer pink in center.
