Newman's Fantastic Five Food Group Salad
Makes 12 servings
Ingredients
1 pound small shells or elbow macaroni, cooked (8 cups), divided
1 cup (4 ounces) finely grated Romano or Parmesan cheese, divided
1 (15-1/2- to 19-ounce) can chickpeas, rinsed and drained
5 medium ribs celery, cut into 1/4-inch pieces (2 cups)
2 cups shredded carrots
1 (11-ounce) jar NEWMAN'S OWN® Mild Salsa
2 medium apples, peeled, cored and cut into 1/4-inch pieces (2 cups)
2 medium pears, peeled, cored and cut into 1/4-inch pieces (2 cups)
1-1/2 pounds small tomatoes (about 7)
1 large red onion, minced (1 cup)
1 (15-1/2- to 19-ounce) can white kidney beans (cannellini), rinsed and drained
1 large cucumber, peeled and cut into 1/4-inch pieces
1 cup (4 ounces) shredded Cheddar cheese
1 cup (8 ounces) NEWMAN'S OWN® Olive Oil & Vinegar Salad Dressing
   
In large bowl, layer ingredients in the following order (use entire quantity unless otherwise noted): 4 cups pasta, 1/2 cup Romano cheese, chickpeas, celery, carrots, salsa, 4 cups pasta, 1/2 cup Romano cheese, apples, pears, tomatoes, onion, cannellini beans, cucumber and Cheddar cheese.
Cover with salad dressing. Let stand 15 minutes before serving or cover and refrigerate to serve later.
