Spicy Mashed Potato Salad
Makes 4 servings

Ingredients

pounds Idaho potatoes, peeled and cut into 1-inch chunks
|
|
1/4
|
cup mayonnaise
|
|
1/4
|
cup sour cream
|
|
2
|
green onions, sliced
|
|
1
|
carrot, peeled and grated
|
|
4
|
teaspoons TABASCO® brand Green Jalapeño Pepper Sauce
|
|
1
|
teaspoon salt
|
|
|
Lettuce leaves
|
|
|
Tomato wedges
|
|
|
|
|
|
|
|
|
|
Place potatoes and enough water to cover in 4-quart saucepan. Heat to boiling over high heat. Cover, reduce heat and simmer 15 minutes or until potatoes are tender; drain. Coarsely mash potatoes in large bowl. Stir in mayonnaise, sour cream, green onions, carrot, TABASCO® Green Sauce and salt.

To serve, line plate with lettuce leaves; top with potato salad. Garnish with tomato wedges.
