Larry’s Pineapple Hula Salad


Ingredients
2 cans (8 ounces each) DOLE® Pineapple Chunks, drained
2 cups cubed cooked chicken
1 cup diagonally sliced celery
1 cup diced DOLE® Papaya
1/2 cup macadamia nuts or peanuts
1 cup mayonnaise
2 teaspoons curry powder
  Crisp salad greens
  Chives and sliced kumquats for garnish
   
Combine pineapple chunks, chicken, celery, papaya and nuts in large bowl. Blend mayonnaise and curry powder in small bowl; pour over chicken mixture. Blend thoroughly. Cover; chill at least 1 hour. Serve mounded on salad greens. Garnish with chives and kumquats.
