Swiss Onion Potatoes Rosti


Ingredients
1 tablespoon olive oil
1/2 cup crumbled cooked bacon
5 cups shredded fresh or frozen potatoes
1-1/3 cups French's® French Fried Onions
1 cup (4 ounces) shredded Swiss or Cheddar cheese
  Applesauce or sour cream (optional)
   
Prep Time 5 minutes
Cook Time 15 minutes
1. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook bacon 1 minute. Stir in potatoes, French Fried Onions and cheese. Cook 8 minutes or until lightly browned on bottom.
2. Loosen mixture and gently invert onto large serving platter. Return to skillet and cook 6 minutes or until browned.
3. Remove to serving platter. Season to taste with salt and pepper. If desired, serve with dollop of applesauce or sour cream on the side.
