Dijon Chicken & Rice Lettuce Wraps
Makes 4 servings
Ingredients
1 (6.9-ounce) package RICE-A-RONI® Chicken Flavor
1/2 tablespoon margarine or butter
12 ounces boneless, skinless chicken breasts, cut into thin strips
2 medium carrots, chopped
1/2 teaspoon dried thyme leaves
2 tablespoons Dijon mustard
1 tablespoon honey
6 to 8 large iceberg or Romaine lettuce leaves,* washed and patted dry with paper towel
*Eight warm flour tortillas can be substituted.
   
Prep Time 10 minutes
Cook Time 30 minutes
1. In large skillet over medium heat, sauté rice-vermicelli mix with margarine until vermicelli is golden brown.
2. Slowly stir in 2-1/2 cups water, chicken, carrots, thyme and Special Seasonings; bring to a boil. Reduce heat to low. Cover; simmer 15 to 20 minutes or until rice is tender and chicken is no longer pink inside. Let stand 5 minutes.
3. Meanwhile, in small bowl combine mustard and honey. To serve, spread 1 teaspoon mustard mixture down center of lettuce leaf. Top with 1/2 cup chicken mixture and roll up burrito-style. Repeat with remaining lettuce leaves.
