Combine vinegar, sugar and cornstarch in large microwave-safe bowl; mix well. Stir in mustard and salt. Microwave, uncovered, on HIGH 1 to 2 minutes or until thickened, stirring once. Add corn, celery, pepper, onion and pickle relish; toss well to coat evenly. Cover and refrigerate 30 minutes before serving. Serve as a relish on hamburgers or hot dogs, or serve on the side with grilled meats.
