Honey-Dijon Chicken
Makes 4 servings
Ingredients
4 boneless, skinless chicken breast halves (about 1 pound)
2 tablespoons all-purpose flour
3 tablespoons margarine or butter, divided
1 (6.9-ounce) package RICE-A-RONI® Chicken Flavor
1-1/2 cups fresh or frozen sliced carrots
2 tablespoons honey
2 tablespoons Dijon mustard
   
Prep Time 10 minutes
Cook Time 35 minutes
1. Coat chicken with flour. In large skillet over medium heat, melt 2 tablespoons margarine. Add chicken; cook 5 minutes on each side or until browned. Remove from skillet; set aside.
2. In same skillet over medium heat, sauté rice-vermicelli mix with remaining 1 tablespoon margarine until vermicelli is golden brown.
3. Slowly stir in 2-1/4 cups water, carrots and Special Seasonings; bring to a boil. Place chicken over rice. Reduce heat to low. Cover; simmer 15 minutes.
4. In small bowl, combine honey and mustard. Drizzle over chicken. Simmer uncovered, 5 minutes or until rice is tender and chicken is no longer pink inside.
