Italian Vegetable Strata
Makes 8 servings
Ingredients
1 loaf Italian bread
1-1/3 cups French's® French Fried Onions, divided
1 cup (4 ounces) shredded mozzarella cheese, divided
1 small zucchini, thinly sliced
1 red bell pepper, sliced
5 eggs
2-1/2 cups milk
1/3 cup (1-1/2 ounces) grated Parmesan cheese
1/2 teaspoon each dried oregano and basil leaves
   
Prep Time 10 minutes
Cook Time 50 minutes
1. Preheat oven to 350°F. Grease 3-quart shallow baking dish. Cut enough slices of bread, 1/2 inch thick, to arrange single layer in bottom of dish, overlapping slices if necessary. Layer 2/3 cup French Fried Onions, 2/3 cup mozzarella cheese, zucchini and bell pepper over bread.
2. Beat eggs, milk, Parmesan cheese, oregano, basil, 1/2 teaspoon salt and 1/4 teaspoon black pepper in medium bowl. Pour over layers. Sprinkle with remaining 1/3 cup mozzarella cheese. Let stand 10 minutes.
3. Bake 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 2/3 cup onions. Bake 5 minutes or until onions are golden. Cool on wire rack 10 minutes. Cut into squares to serve.
