1. Cut 1/2 inch off top of garlic; discard. Place garlic and 1/4 cup water in shallow microwavable dish. Brush some of the oil over garlic. Cover; microwave on HIGH (100%) 3 to 4 minutes or until garlic is just tender. Drain well.
2. Grill garlic, cut-side-down, over medium-hot heat 5 minutes or until garlic is golden and very tender. Cool slightly. Separate garlic into cloves; pinch each clove so roasted flesh slips out.
3. Place garlic cloves in blender; add 2 tablespoons water, oil, mustard, vinegar, salt and pepper. Cover; process 1 to 2 minutes or until smooth. Stir in chives. Cover and chill in refrigerator until ready to serve. Serve over mixed salad greens, if desired.
Tip
For a variation, try using other types of vinegars, such as tarragon or balsamic. Other minced fresh herbs may be used instead of chives, such as fresh basil, tarragon or rosemary.
