medium carrot, sliced

medium tomato, chopped

cup crumbled Stilton cheese

cup pecans, toasted and crumbled

cup olive oil

tablespoons white wine vinegar
Salt and coarsely ground black pepper to taste

COOK: CLEAN: Wash hands. Prepare rice according to package directions; transfer to serving dish. Meanwhile, cook broccoli and carrot in large saucepan of rapidly boiling water until crisp-tender. Drain and rinse under cold water. Arrange broccoli and carrot over rice. Sprinkle with tomato, cheese and pecans. Combine olive oil and vinegar in small bowl; whisk to blend. Drizzle over vegetables and rice. Season with salt and pepper.
