Red's Rockin' Rainbow Cupcakes


These cupcakes are the perfect after-school snack.
 
Ingredients
2-1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1-2/3 cups granulated sugar
1/2 cup (1 stick) butter, softened
1 cup milk
2 teaspoons vanilla extract
3 large egg whites
  Blue and assorted food colorings
1 container (16 ounces) white frosting
1-1/2 cups "M&M's"® Chocolate Mini Baking Bits, divided
   
Preheat oven to 350°F. Lightly grease 24 (2-3/4-inch) muffin cups or line with paper or foil liners; set aside. In large bowl combine flour, baking powder and salt. Blend in sugar, butter, milk and vanilla; beat about 2 minutes. Add egg whites; beat 2 minutes. Divide batter evenly among prepared muffin cups. Place 2 drops desired food coloring into each muffin cup. Swirl gently with knife. Sprinkle evenly with 3/4 cup "M&M's"® Chocolate Mini Baking Bits. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely on wire racks. Combine frosting and blue food coloring. Spread frosting over cupcakes; decorate with remaining 3/4 cup "M&M's"® Chocolate Mini Baking Bits to make rainbows. Store in tightly covered container.
