Quick Fried Rice

Ingredients

cup UNCLE BEN'S® Instant Brown Rice
|
|

|
tablespoon margarine
|
|
1/2
|
cup sliced yellow summer squash
|
|
1/2
|
cup diced red bell pepper
|
|
1/2
|
cup chopped green onions with tops
|
|
2
|
eggs, lightly beaten
|
|
2
|
teaspoons soy sauce
|
|
|
|
|
|
|
|
|
|
1. Cook rice according to package directions.
|
|
2. Melt margarine in medium nonstick skillet. Add squash, bell pepper and green onions; cook and stir over medium-low heat 5 minutes. Add eggs; cook and stir 2 minutes just until eggs are cooked.
|
|
3. Add rice to vegetable mixture; sprinkle with soy sauce. Cover skillet and cook over low heat 5 minutes or until rice is hot.
