Jamaican Cherry Bread
Makes 1 loaf, about 16 slices

Jamaican Cherry Bread


Ingredients
2-1/2 teaspoons active dry yeast
3-1/4 cups bread flour
1 tablespoon grated lime peel
2 teaspoons minced fresh ginger or 3/4 teaspoon ground ginger
1 teaspoon salt
1 cup milk
1/4 cup firmly packed brown sugar
1/4 cup lime juice
3 tablespoons butter, melted
2/3 cup toasted coconut*
1/2 cup dried tart cherries
*To toast coconut: spread coconut on ungreased pan. Bake in preheated 350°F oven 5 to 7 minutes, stirring occasionally, or until golden brown.
   
Bread Machine Directions
Measure carefully, placing all ingredients except coconut and cherries in bread machine pan in order specified by owner's manual.
Program desired cycle; press start. Add coconut and cherries at the beep or at the end of the first kneading cycle. Remove baked bread from pan; cool on wire rack. Serve at room temperature.
