medium spaghetti squash

tablespoons peanut butter

tablespoons soy sauce

tablespoon grated gingerroot

green onions, sliced

PREP: CLEAN: Wash hands. Carefully cut squash in half lengthwise. Remove seeds and place flesh-side down in microwavable baking dish. Add 1/2 cup water; cover with plastic wrap.
COOK: Microwave squash at HIGH 9 to 10 minutes or until skin is firm but soft. Remove from dish and allow to cool until safe to handle. Spoon out flesh into bowl (it will come out in strands like spaghetti). Meanwhile, prepare rice according to package directions. In large nonstick skillet, combine peanut butter, soy sauce and gingerroot. Heat slightly; add squash and rice. Mix thoroughly.
SERVE: Garnish rice and squash mixture with green onions.
CHILL: Refrigerate leftovers immediately.
Tip
Squash can also be baked in 350°F oven 45 to 50 minutes (omit plastic wrap).
