Glazed Fruit Kabobs


Fresh pineapple is not only tasty but nutritionally beneficial as well. It contains an enzyme that aids in digestion and is good for arteries and skin.
 
Ingredients
2 fresh California nectarines, halved, pitted and cut into 6 wedges
3 fresh California plums, halved, pitted and quartered
1/2 fresh pineapple, peeled and cut into 2-inch cubes
1/4 cup packed brown sugar
2 tablespoons water
1-1/2 teaspoons cornstarch
3/4 teaspoon rum extract
   
Alternately thread fruit onto skewers. Combine sugar, water, cornstarch and rum extract in small saucepan. Bring to a boil, stirring constantly, until thickened and clear. Place fruit kabobs in shallow pan. Brush with glaze mixture. (This may be done ahead.) Grill kabobs about 4 to 5 inches from heat 6 to 8 minutes or until hot, turning once, brushing occasionally with glaze.
