Crunchy Fish Sticks
Makes 4 servings
Ingredients
3 tablespoons all-purpose flour
1/2 teaspoon ground black pepper
1 large egg
2 tablespoons milk
3 cups cornflakes, coarsely crushed
1 pound cod fillets, cut into 3×1-inch strips and patted dry
1/2 to 3/4 cup vegetable oil
   
1. In shallow bowl, combine flour and pepper; set aside. In small bowl, combine egg and milk; set aside. In another shallow bowl, place crushed cornflakes; set aside.
2. Coat fish in flour mixture, dip in egg mixture, then roll in cornflakes, pressing coating gently onto each fish strip.
3. In large skillet over medium heat, heat oil. Add fish strips; cook 3 to 4 minutes on each side or until golden brown and fish is cooked through. Drain.
