cup raisins

cup boiling water
|
|
1/3

cup margarine or butter, softened
|

3/4
|
cup GRANDMA'S® Molasses
|
|

egg
|

cups all-purpose flour

teaspoons baking soda
|

teaspoon ground cinnamon
|

teaspoon ground ginger
|

teaspoon salt

Topping
|
|
1/3
|
cup all-purpose flour
|
|
1/4
|
cup firmly packed brown sugar
|
|
1/4
|
cup chopped nuts
|
|

tablespoons margarine or butter
|
|

teaspoon cinnamon
|

Preheat oven to 375°F. Grease bottoms only of 12 muffin cups or line with paper baking cups. In small bowl, cover raisins with boiling water; let stand 5 minutes. In large bowl, beat 1/3 cup margarine and molasses until fluffy. Add egg; beat well. Stir in 2 cups flour, baking soda, 1 teaspoon cinnamon, ginger and salt. Blend just until dry ingredients are moistened. Gently stir in raisins and water. Fill prepared muffin cups 3/4 full. For topping, combine all ingredients in small bowl. Sprinkle over muffins.

Bake 20 to 25 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes; remove from pan. Serve warm.
