Easy Weeknight Chicken Cacciatore
Makes 4 servings
Ingredients
1 tablespoon BERTOLLI® Olive Oil
2-1/2 pounds chicken pieces
1 package (8 ounces) fresh mushrooms, sliced
1 can (28 ounces) crushed tomatoes
1 envelope LIPTON® RECIPE SECRETS® Onion Soup Mix
1/4 cup dry red wine
1/2 teaspoon dried basil leaves
   
Prep Time 10 minutes
Cook Time 40 minutes
1. In 6-quart saucepan, heat olive oil over medium-high heat and brown chicken pieces. Add mushrooms and cook 2 minutes, stirring occasionally.
2. Stir in crushed tomatoes, soup mix, wine and basil. Bring to a boil over high heat.
3. Reduce heat to low and simmer covered, 30 minutes or until chicken is thoroughly cooked. Serve, if desired, over hot cooked noodles or rice.
 
Slow Cooker Method   In slow cooker, add mushrooms, then chicken. Combine soup mix, tomatoes, wine and basil; pour over chicken. Cook covered, on LOW 8 hours or HIGH 4 to 6 hours.
