small green bell pepper, cut into 3/4-inch pieces

*To prevent burning of wooden skewers, soak skewers in water for 10 minutes before assembling kabobs.
Prep and Cook Time
25 minutes
1. Drain apricot syrup into small saucepan. Blend in cornstarch until dissolved. Cook over medium heat, stirring constantly, until thickened. Stir in mustard and basil. Set aside.
2. Thread beef, apricots, green pepper and mushrooms alternately onto skewers; brush with apricot syrup mixture. Grill kabobs over hot coals (or broil) about 5 minutes on each side or to desired doneness, brushing occasionally with additional syrup mixture. Garnish, if desired.
