Chili Corn Wraps
Makes 4 servings
Ingredients
4 large flour tortillas
1 tablespoon vegetable oil
1 medium onion, chopped
1 green bell pepper, diced
1 pound lean ground beef or turkey
2 tablespoons TABASCO® brand Green Pepper Sauce
1 tablespoon chili powder
1 teaspoon salt
1 (11-ounce) can corn, drained
1 (4-ounce) jar diced pimentos, drained
1/2 cup (2 ounces) shredded Monterey Jack cheese
   
Preheat oven to 375°F. Wrap tortillas in foil; place in oven 10 minutes to warm. Heat oil in 12-inch skillet over medium heat. Add onion and green bell pepper; cook 5 minutes or until tender-crisp. Remove vegetables to plate with slotted spoon.
Add beef to drippings remaining in skillet; cook over medium-high heat until well browned, stirring occasionally. Stir in TABASCO® Green Pepper Sauce, chili powder and salt; cook 1 minute, stirring frequently. Remove from heat. Stir in vegetable mixture, corn, pimentos and Monterey Jack cheese. To assemble wraps, place 1/4 of mixture on each tortilla; roll up tortillas, tucking in sides.
