Sweet and Sour Chicken Nuggets
Makes 4 servings
Ingredients
2 (1-cup) bags UNCLE BEN'S® Boil-In-Bag Rice
1 package (10 ounces) frozen chicken nuggets or chicken chunks
1 tablespoon oil
2 large green bell peppers, cut into 1-inch squares
2 large carrots, diagonally cut into thin slices
1-1/2 teaspoons minced garlic
2 cans (8 ounces each) pineapple chunks in juice, drained and 1/2 cup juice reserved
1 jar (10 ounces) sweet and sour sauce
   
1. Cook rice according to package directions.
2. Prepare chicken nuggets according to package directions for conventional oven.
3. Heat oil in large skillet over medium-high heat until hot. Add bell peppers, carrots and garlic; cook and stir 4 minutes. Add reserved pineapple juice. Cover; reduce heat and simmer 10 to 12 minutes until vegetables are almost tender. Add pineapple chunks; cover and cook 2 minutes. Stir in sweet and sour sauce; cover and cook 2 more minutes or until hot.
4. Place warm chicken nuggets on a bed of rice and top with vegetable mixture.
