Pineapple Oatmeal Crunchies
Makes 24 large cookies

Ingredients

cans (8 ounces each) DOLE® Crushed Pineapple
|

1-1/2
|
cups margarine, softened
|
|
1-1/2
|
cups packed brown sugar
|
|

eggs
|
|

cups all-purpose flour
|
|

cups old-fashioned rolled oats
|
|

teaspoon baking powder
|
|

teaspoon ground cinnamon
|

1/2

teaspoon salt
|

bags (1.4 ounces each) chocolate covered toffee nuggets

• Drain crushed pineapple well, reserving 1/2 cup juice.
|
|
• Beat margarine and sugar until light and fluffy. Beat in eggs. Stir in pineapple and reserved juice.
|
|
• Combine flour, oats, baking powder, cinnamon and salt. Add to pineapple mixture and mix well. Stir in candy.
|
|
• Drop by 1/4 cup scoopfuls 1 inch apart onto cookie sheets coated with cooking spray. Flatten slightly. Bake at 375°F 30 minutes.
