Pineapple Oatmeal Crunchies
Makes 24 large cookies
Ingredients
2 cans (8 ounces each) DOLE® Crushed Pineapple
1-1/2 cups margarine, softened
1-1/2 cups packed brown sugar
2 eggs
3 cups all-purpose flour
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
5 bags (1.4 ounces each) chocolate covered toffee nuggets
   
Prep Time 20 minutes
Bake Time 30 minutes per batch
Drain crushed pineapple well, reserving 1/2 cup juice.
Beat margarine and sugar until light and fluffy. Beat in eggs. Stir in pineapple and reserved juice.
Combine flour, oats, baking powder, cinnamon and salt. Add to pineapple mixture and mix well. Stir in candy.
Drop by 1/4 cup scoopfuls 1 inch apart onto cookie sheets coated with cooking spray. Flatten slightly. Bake at 375°F 30 minutes.
