Roast Beef Po' Boy
Makes 4 sandwiches
Ingredients
6 tablespoons butter or margarine
6 tablespoons flour
1-1/2 cups sliced onion (1 large)
1 small green bell pepper, sliced (1 cup)
2 cups beef broth
1 teaspoon Worcestershire sauce
1 teaspoon Original TABASCO® brand Pepper Sauce
1/2 teaspoon dried thyme leaves
4 (6-inch) French or round rolls
1 pound thinly sliced cooked beef
   
Melt butter in medium saucepan over medium heat; stir in flour. Cook about 4 minutes or until flour browns, stirring constantly. Add onion and green bell pepper; cook and stir about 5 minutes. Gradually stir in broth. Add Worcestershire sauce, TABASCO® Sauce and thyme; cook and stir until mixture boils and thickens.
Cut thin slice from top of each roll. Scoop out soft insides; fill with beef. Spoon gravy over beef. Replace tops on rolls.
