Albacore Salad Puttanesca with Garlic Vinaigrette

Albacore Salad Puttanesca with Garlic Vinaigrette


This dish may become a staple in your meal planning.
 
Ingredients
2 cups cooked angel hair pasta, chilled
2 cups chopped peeled plum tomatoes
1 can (4-1/4 ounces) chopped* ripe olives, drained
1 cup Garlic Vinaigrette Dressing (recipe follows)
1 (3-ounce) STARKIST Flavor Fresh Pouch® Tuna (Albacore)
1/4 cup chopped fresh basil leaves
*If you prefer, the olives can be sliced rather than chopped.
   
In large bowl, combine chilled pasta, tomatoes, olives and 1 cup Garlic Vinaigrette Dressing. Add tuna and basil leaves; toss. Serve immediately.
Garlic Vinaigrette Dressing
 
Ingredients
1/3 cup red wine vinegar
2 tablespoons lemon juice
1 to 2 cloves garlic, minced or pressed
1 teaspoon freshly ground black pepper
  Salt to taste
1 cup olive oil
   
Prep Time 10 minutes
In small bowl, whisk together vinegar, lemon juice, garlic, pepper and salt. Slowly add oil, whisking continuously, until well blended. Refrigerate leftover dressing.
