Chicken Curry Bombay


Ingredients
1 medium onion, cut into wedges
2 cloves garlic, minced
2 teaspoons curry powder
1 tablespoon olive oil
2 boneless, skinless chicken breast halves, sliced 1/4 inch thick
1 can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Original Recipe
1/3 cup seedless raisins
1 can (14-1/2 ounces) DEL MONTE Whole New Potatoes, drained and cut into chunks
1 can (14-1/2 ounces) DEL MONTE Cut Green Beans, drained
   
Prep Time 10 minutes
Cook Time 18 minutes
1. Cook onion, garlic and curry in oil in large skillet until tender, stirring occasionally.
2. Stir in chicken, tomatoes and raisins; bring to a boil.
3. Cover and simmer over medium heat 8 minutes. Add potatoes and green beans.
4. Cook, uncovered, 5 minutes, stirring occasionally. Season with salt and pepper, if desired.
