Rice and Veggie Cheese Medley

Ingredients

tablespoons butter or margarine
|
|

small onion, chopped
|
|
3/4
|
teaspoon Italian herb seasoning, crushed
|
|

package (10 ounces) frozen mixed vegetables
|

box UNCLE BEN'S® COUNTRY INN® Three Cheese Rice
|
|

|
cup water
|
|
1
|
cup milk
|
|
3/4
|
cup (3 ounces) shredded pizza cheese blend
|
|
|
|
|
|
|

|
1. Melt butter in large skillet over medium-high heat. Add onion and herb seasoning. Cook 3 minutes or until onion is soft.

2. Add vegetables and rice, reserving seasoning packet; cook 2 minutes. Add water, milk and contents of seasoning packet. Bring to a boil. Cover; reduce heat and simmer 10 minutes, stirring occasionally. Remove from heat.

3. Let stand, covered, 5 minutes. Stir in cheese.
