Banana Cocoa Marbled Bars


Ingredients
1/2 cup uncooked rolled oats
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup MOTT'S® Natural Apple Sauce
1 whole egg
1 egg white
2 tablespoons vegetable oil
1/3 cup low-fat buttermilk
2 tablespoons unsweetened cocoa powder
1 large ripe banana, mashed (2/3 cup)
   
1. Preheat oven to 350°F. Spray 9-inch square baking pan with nonstick cooking spray.
2. Place oats in food processor or blender; process until finely ground.
3. In medium bowl, combine oats, flour, baking powder, baking soda and salt.
4. In large bowl, combine sugar, apple sauce, whole egg, egg white and oil.
5. Add flour mixture to apple sauce mixture; stir until well blended. (Mixture will look dry.)
6. Remove 1 cup of batter to small bowl. Add buttermilk and cocoa; mix well.
7. Add banana to remaining batter. Mix well; spread into prepared pan.
8. Drop tablespoonfuls of cocoa batter over banana batter. Run knife through batters to marble.
9. Bake 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes; cut into 14 bars.
