Pumpkin Streusel Cake
Makes 12 to 16 servings
Ingredients
Streusel
1 cup packed brown sugar
2 teaspoons ground cinnamon
1/3 cup butter or margarine, softened
1 cup chopped nuts
Cake
1 package DUNCAN HINES® Moist Deluxe® Classic Yellow Cake Mix
1 can (16 ounces) solid pack pumpkin
3 eggs
1/4 cup butter or margarine, softened
   
1. Preheat oven to 350°F.
2. For streusel, combine sugar and cinnamon in small bowl. Cut in 1/3 cup butter with pastry blender or 2 knives. Stir in nuts; set aside.
3. For cake, combine cake mix, pumpkin, eggs and 1/4 cup butter in large mixing bowl. Beat at medium speed with electric mixer for 2 minutes. Spread half of batter into ungreased 13×9-inch pan. Sprinkle half of streusel over batter. Spread remaining batter over streusel. Top with remaining streusel. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.
 
Tip   Serve warm as a coffeecake, or cool to serve as a dessert topped with whipped topping.
