Vegetable Pasta Italiano

Ingredients

pound lean ground turkey
|
|
1

red bell pepper, seeded, sliced
|
|
1
|
tablespoon paprika
|
|
1
|
can (14-1/2 ounces) crushed tomatoes
|
|
1
|
can (14-1/2 ounces) reduced sodium chicken broth
|
|
2
|
cups uncooked bow tie pasta
|
|
2
|
cups DOLE® Broccoli, cut into florets
|
|
1
|
cup DOLE® Cauliflower, cut into florets
|
|
|
Savory Topping (recipe follows)
|
|
|

|
• In 12-inch nonstick skillet, brown turkey 2 minutes.
|
|
• Stir in red pepper strips and paprika. Reduce heat to low, stirring 2 minutes longer.
|
|
• Stir in tomatoes, chicken broth and pasta. Bring to a boil. Reduce heat to low, cover and simmer 15 minutes. Arrange broccoli and cauliflower on top. Cover, simmer 10 minutes or until pasta is soft.

• Sprinkle with Savory Topping. Let stand 3 minutes before serving.

cup grated Parmesan cheese
|

cup minced parsley
|

Combine all ingredients in small bowl; mix well.
