cedar plank (about 7×15 inches, 1/2 inch thick), soaked*

salmon fillets (6 ounces each), skin intact

teaspoons sugar, divided

teaspoon chili powder

teaspoon ground allspice

teaspoon salt

tablespoon fresh lemon juice

tablespoon fresh lime juice

tablespoons orange juice
2
teaspoons minced fresh ginger

cup chopped fresh mint
1/8
teaspoon red pepper flakes

medium mangos, peeled, and cut into 1-inch pieces
*Soak in water 5 hours or overnight.
1. Preheat grill to medium-high.
2. Rinse and pat dry salmon fillets. Combine 1 teaspoon sugar, chili powder, allspice, black pepper and salt in small bowl. Rub evenly over smooth side of each fillet. Set aside.
3. Combine remaining 1 teaspoon sugar, lemon, lime and orange juices, ginger, mint and red pepper in medium bowl. Set aside.
4. Thread mango pieces onto skewers or spread out in a grill basket.
5. If using a charcoal grill, wait until coals are covered with gray ash to start grilling salmon. If using a gas grill, turn heat down to medium. Keep a clean spray bottle filled with water nearby in case plank begins to burn (a common occurrence). If it flares up, spray lightly with water.
6. Lightly brush grid with oil and place soaked plank on top. Cover, heat until plank smokes and crackles. Place salmon, skin side down, on plank and arrange mango skewers alongside plank. Cover. Grill 6 to 8 minutes, turning skewers frequently, until mango is slightly charred. Remove mango from the grill. Set aside. Cover grill. Continue grilling the salmon 9 to 12 minutes, without turning or until the flesh turns opaque and flakes easily.
7. Remove plank from grill and transfer salmon to a serving platter. Slide mango pieces off skewers and add to mint mixture, tossing gently to coat. Serve immediately alongside salmon.
Tip
Cedar planks can be purchased at gourmet kitchen stores or on the Internet. They may also be purchased in hardware stores; be sure to buy untreated wood at least 1/2-inch thick. Regardless of the source, use each plank for grilling food only once. Used planks may be broken up into wood chips and used to smoke foods.
