In large bowl, combine all ingredients except lettuce cups. Cover and refrigerate 4 hours or overnight. Serve in lettuce cups, if desired.
Sherry Chive Vinaigrette
In blender container, combine 1/3 cup olive oil, 2 tablespoons sherry wine vinegar, 1/4 cup snipped fresh chives, 1 tablespoon chopped fresh parsley, 1 peeled clove garlic and 1/4 teaspoon freshly ground black pepper. Cover and process until chives are minced.
