1. Combine turkey, cilantro, bread crumbs, egg, mustard, salt and pepper in large bowl. Shape into 4 patties, pressing firmly.
2. Place patties on oiled grid. Grill over high heat 15 minutes or until no longer pink in center (165°F). Top burgers with cheese during last few minutes of grilling. Grill pepper rings 2 minutes. To serve, place burgers on buns and top with pepper rings. Serve with additional mustard, if desired.
