Pumpkin Surprise Muffins
Makes 12 muffins
Can you find the cream cheese center in each cupcake?
 
Ingredients
3 ounces cream cheese, softened
2 tablespoons firmly packed light brown sugar
1 cup shredded bran cereal
3/4 cup buttermilk
1-1/4 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon, divided
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 cup solid pack pumpkin
1/4 cup vegetable oil
1/4 cup (1/2 stick) butter, melted
1 large egg
1-1/4 cups "M&M's"® Milk Chocolate Mini Baking Bits, divided
1 cup cream cheese frosting
   
Preheat oven to 400°F. Lightly grease 12 (2-3/4-inch) muffin cups or line with paper or foil liners; set aside. In small bowl combine cream cheese and brown sugar; set aside. In medium bowl combine cereal and buttermilk; let stand 20 minutes. In large bowl combine flour, granulated sugar, baking powder, baking soda, cinnamon, salt, ginger and nutmeg. Add pumpkin, oil, butter and egg to cereal mixture; blend well. Stir pumpkin mixture into flour mixture just until all ingredients are moistened. Stir in 1 cup "M&M's"® Milk Chocolate Mini Baking Bits. Fill each prepared muffin cup 1/2 full with batter. Spoon 1 teaspoon cream cheese mixture into center of batter in each cup; top with 1 tablespoon remaining batter. Bake 15 to 18 minutes or until toothpick inserted in center comes out clean. Cool completely on wire racks. Frost muffins with cream cheese frosting; decorate with remaining 1/4 cup "M&M's"® Milk Chocolate Mini Baking Bits. Store in tightly covered container.
