Peanut Butter Mini Muffins


These muffins are small in size, but big on taste!
 
Ingredients
1/3 cup creamy peanut butter
1/4 cup (1/2 stick) butter, softened
1/4 cup granulated sugar
1/4 cup firmly packed light brown sugar
1 large egg
3/4 cup buttermilk
3 tablespoons vegetable oil
3/4 teaspoon vanilla extract
1-1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups "M&M's"® Milk Chocolate Mini Baking Bits, divided
  Chocolate Glaze (recipe follows)
   
Preheat oven to 350°F. Lightly grease 36 (1-3/4-inch) mini muffin cups or line with paper or foil liners; set aside. In large bowl cream peanut butter, butter and sugars until light and fluffy; beat in egg. Beat in buttermilk, oil and vanilla. In medium bowl combine flour, baking powder, baking soda and salt; gradually blend into creamed mixture. Divide batter evenly among prepared muffin cups. Sprinkle batter evenly with 3/4 cup "M&M's"® Milk Chocolate Mini Baking Bits. Bake 15 to 17 minutes or until toothpick inserted in centers comes out clean. Cool completely on wire racks. Prepare Chocolate Glaze. Place glaze in resealable plastic sandwich bag; seal bag. Cut tiny piece off one corner of bag (not more than 1/8 inch). Drizzle glaze over muffins. Decorate with remaining 1/2 cup "M&M's"® Milk Chocolate Mini Baking Bits; let glaze set. Store in tightly covered container.
 
Chocolate Glaze   In top of double boiler over hot water melt 2 (1-ounce) squares semi-sweet chocolate and 1 tablespoon butter. Stir until smooth; let cool slightly.
