Oniony Chicken Cacciatore
Makes 8 servings
Ingredients
2 pounds boneless skinless chicken thighs
2 cups sliced mushrooms
1 red or green bell pepper, thinly sliced
2 cloves garlic, minced
1 jar (28 ounces) marinara sauce
1-1/3 cups French's® French Fried Onions, divided
   
Prep Time 10 minutes
Cook Time 25 minutes
1. Heat 1 tablespoon oil in large nonstick skillet until hot. Cook chicken 5 minutes or until browned on both sides. Remove; set aside.
2. In same skillet, cook and stir mushrooms, pepper and garlic until mushrooms are lightly browned. Stir in sauce and 2/3 cup French Fried Onions. Return chicken to skillet. Heat to boiling. Reduce heat to medium-low. Cook, covered, 15 minutes or until chicken is no longer pink in center, stirring occasionally.
3. Sprinkle chicken with remaining 2/3 cup onions. Serve over pasta, if desired.
 
Tip   You may substitute boneless pork chops for the chicken, if desired.
