Stir-Fry Tomato Beef


Ingredients
1 cup uncooked long-grain white rice
1 pound flank steak
1 tablespoon cornstarch
1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon minced gingerroot or 1/4 teaspoon ground ginger
1 tablespoon vegetable oil
1 can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Seasoned with Onions, Celery & Green Peppers
   
Prep Time 10 minutes
Cook Time 20 minutes
1. Cook rice according to package directions.
2. Meanwhile, cut meat in half lengthwise, then cut crosswise into thin slices.
3. Combine cornstarch, soy sauce, garlic and ginger in medium bowl. Add meat; toss to coat.
4. Heat oil in large skillet over high heat. Add meat; cook, stirring constantly, until browned. Add undrained tomatoes; cook until thickened, about 5 minutes, stirring frequently.
5. Serve meat mixture over hot cooked rice. Garnish, if desired.
