Poached Salmon & Asparagus
Makes 6 servings
Ingredients
2 tablespoons butter
1 cup onion, sliced
2 stalks celery, sliced
1 cup asparagus stems, sliced
2 packages UNCLE BEN'S NATURAL SELECT® Garlic & Butter Flavor Rice
3 cups water
6 pieces salmon fillets
1 cup asparagus tips
   
Preparation Time 10 minutes
1. In large skillet with tight-fitting lid, melt butter over medium heat and sauté onion, celery and asparagus stems for about 3 minutes.
2. Add rice and water; bring to a boil. Carefully place fillets on top of rice; reduce heat. Cover and simmer about 4 minutes.
3. Arrange asparagus tips around salmon fillets; cover and simmer 6 to 8 minutes longer.
