Poached Salmon & Asparagus

cup onion, sliced
|

stalks celery, sliced
|
|

cup asparagus stems, sliced

packages UNCLE BEN'S NATURAL SELECT® Garlic & Butter Flavor Rice

cups water
|

pieces salmon fillets

cup asparagus tips

Preparation Time

1. In large skillet with tight-fitting lid, melt butter over medium heat and sauté onion, celery and asparagus stems for about 3 minutes.
|
|
2. Add rice and water; bring to a boil. Carefully place fillets on top of rice; reduce heat. Cover and simmer about 4 minutes.
|
|
3. Arrange asparagus tips around salmon fillets; cover and simmer 6 to 8 minutes longer.
