large baking potatoes, scrubbed

1/2

pound lean ground American lamb
|
|
1/3
|
cup finely chopped onion
|
|
1/3
|
cup chopped green bell pepper
|
|
1/4
|
cup chopped mushrooms
|
|

teaspoons dried parsley flakes
|
|

teaspoons Italian seasoning
|
|
1/2

teaspoon garlic powder
|
|
1/2

cup plain nonfat yogurt
|
|
1/2
|
teaspoon salt
|
|
1/4

teaspoon black pepper
|
|

cup (4 ounces) shredded reduced-fat mozzarella cheese, divided
|
|
1/2
|
cup pizza sauce
|
|

sliced black olives (optional)

tablespoons grated Parmesan cheese
|

|
Pierce potatoes several times with fork. Microwave on paper towel at HIGH 10 to 12 minutes or until potatoes are soft. Cool slightly.

Preheat oven to 400°F. Cook lamb in medium skillet over medium heat until no longer pink; drain. Add onion, bell pepper and mushrooms; microwave at HIGH 2 minutes. Stir in parsley, Italian seasoning and garlic powder.

Make lengthwise slit in each potato. Scoop out pulp leaving shells intact. Place pulp in medium bowl. Beat in yogurt, salt and black pepper. Add 2/3 cup mozzarella cheese and ground lamb mixture; mix until blended. Spoon mixture into potato shells. Top each potato with pizza sauce, remaining 1/3 cup mozzarella cheese, olives, if desired, and Parmesan cheese.* Bake 20 minutes or until hot and bubbly.

*Stuffed potatoes can be wrapped in foil and frozen before baking. To serve, thaw in refrigerator and bake as directed.
