Wisconsin Asiago Cheese Puffs
Makes about 30 puffs
Ingredients
1 cup water
1 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon salt
  Cayenne pepper to taste
1 cup flour
4 eggs*
1/2 cup (2 ounces) finely shredded Wisconsin Asiago cheese
1/2 cup (2 ounces) grated Wisconsin Parmesan cheese
*For lighter puffs, use 2 whole eggs and 4 egg whites.
   
Preheat oven to 400°F. In small saucepan, combine water, butter, oil, salt and cayenne; bring to a boil. Add flour all at once; stir until mixture forms a smooth ball. Cook over low heat until mixture is drier but still smooth; transfer mixture to large bowl; beat in eggs, one at a time. Stir in cheeses. Drop batter by measuring tablespoonfuls onto greased cookie sheet. Bake for 20 minutes or until lightly browned and firm. Serve immediately.
