Hot and Spicy Spareribs
Makes 3 servings
Hot and Spicy Spareribs

Hot and Spicy Spareribs


Ingredients
1 rack pork spareribs (3 pounds)
2 tablespoons butter or margarine
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (15 ounces) tomato sauce
2/3 cup packed brown sugar
2/3 cup cider vinegar
2 tablespoons chili powder
1 tablespoon prepared mustard
1/2 teaspoon black pepper
   
Melt butter in large skillet over low heat. Add onion and garlic; cook and stir until tender. Add remaining ingredients, except ribs, and bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally.
Prepare grill with rectangular foil drip pan. Bank briquets on either side of drip pan for indirect cooking. Baste meaty side of ribs with sauce. Place ribs on grid, meaty side down over drip pan,about 6 inches above low coals; baste top side. Cover. Cook about 20 minutes; turn ribs and baste. Cook 45 minutes more or until done, basting every 10 to 15 minutes with sauce.
