5-Minute Beef & Asparagus Stir-Fry
Makes 2 servings
Ingredients
1 box UNCLE BEN'S® Brown & Wild Rice Mushroom Recipe
1/4 pound fresh asparagus, cut into 1-inch pieces
1 small onion, cut into wedges
1 medium red or yellow bell pepper, cut into strips
1 medium carrot, peeled and cut into thin diagonal slices
1/4 pound deli roast beef sliced 1/4 inch thick, cut into strips
1/3 cup purchased stir-fry sauce
   
1. Prepare rice according to package directions.
2. During the last 5 minutes of cooking, heat large nonstick skillet or wok over medium-high heat. Add remaining ingredients; simmer, stirring occasionally, until the vegetables are crisp-tender and the mixture is hot.
