Daffy Taffy
Yield: Makes 4 dozen pieces
Full of flavor but low in fat and calories, this candy-like treat is one the kids will love to help you make!
Ingredients:
2
cups sugar
2/3
cup light corn syrup
1/3
cup water
2
tablespoons margarine
1-1/2
teaspoons vanilla or desired fruit-flavored extract
1/4
teaspoon peppermint oil or desired fruit-flavored oil (optional)
Red, blue and other desired food colorings
Preparation:

Combine sugar, corn syrup, water and margarine in large saucepan. Bring to a boil over medium heat, stirring constantly, until sugar is dissolved. Continue to boil until mixture reaches firm ball stage (270°F on a candy thermometer).

Remove saucepan from heat. Stir in desired flavoring and food colorings. (If making more than 1 flavor or color, divide mixture among 2 or 3 greased bowls before flavoring and coloring.) Let taffy mixture stand until cool enough to handle.

Pull taffy with well greased hands until it is light and no longer shiny. Stretch into rope or coil about 1/2 inch in diameter; cut into 3/4-inch pieces with scissors. Individually wrap candies in waxed paper, if desired. Store in airtight container.
Taffy Twisters:
Stretch taffy into thin ropes or coils. Twist 2 or 3 colors or flavors together; cut into pieces with scissors.
