Yield: Makes 6 servings
Ingredients:
12
slices (12 ounces) thick-sliced bacon, preferably apple wood smoked

1/2
cup packed light brown sugar

2
tablespoons water

1/2
teaspoon ground red pepper



Preparation:
1.
Preheat oven to 375°F. Line 15X10-inch jelly-roll pan with heavy-duty foil. Spray wire rack with nonstick cooking spray; place in prepared pan.

Cut bacon in half crosswise; arrange in single layer on prepared wire rack. Combine sugar, water and red pepper in small bowl; mix well. Brush generously over surface of bacon.

Bake bacon 20 to 25 minutes or until bacon is very brown, but not burned. Immediately transfer to serving platter; cool completely.


Note: Bacon can be prepared up to 3 days ahead, stored between sheets of waxed paper in resealable plastic food storage bag and refrigerated. Let stand at room temperature at least 30 minutes before serving.
