Cold Cucumber Soup
Makes 2 servings
Ingredients
1 cucumber, peeled
1 cup low-fat buttermilk
2 tablespoons red onion, finely chopped
1 teaspoon dried mint leaves, crushed
1 teaspoon sugar
  Dash hot sauce
   
Blend all ingredients thoroughly in food processor. Serve immediately or chill before serving.
