Easy Chicken & Rice
Makes 4 servings
Ingredients
4 boneless, skinless chicken breast halves (about 1 pound)
1/2 teaspoon paprika
1 (6.9-ounce) package RICE-A-RONI® Chicken Flavor
2 tablespoons margarine or butter
1 cup frozen or canned peas, drained
1/2 cup chopped red or green bell pepper
   
Prep Time 5 minutes
Cook Time 30 minutes
1. Sprinkle chicken with paprika; set aside. In large skillet over medium heat, sauté rice-vermicelli mix with margarine until vermicelli is golden brown.
2. Slowly stir in 2-1/2 cups water and Special Seasonings; bring to a boil. Place chicken over rice. Reduce heat to medium-low. Cover; simmer 15 minutes.
3. Stir in peas and bell pepper. Cover; simmer 5 minutes or until rice is tender and chicken is no longer pink inside. Let stand 5 minutes.
