cup prepared pesto sauce
Fresh basil leaves
1. Reserve 1/4 cup bell pepper. In medium saucepan, combine remaining bell pepper, water, rice and contents of seasoning packet. Bring to a boil over high heat. Cover; reduce heat to low and simmer 20 minutes. Remove from heat; let stand, covered, 10 minutes.
2. Stir pesto sauce into rice mixture. Divide reserved 1/4 cup bell pepper evenly over the bottoms of six 6-ounce custard cups. Evenly divide the rice mixture between the cups, gently packing it down. Let stand 3 minutes. Invert each custard cup onto dinner plate, shaking gently to release rice. Garnish each timbale with fresh basil leaves.
Pesto Wild Rice
Prepare rice mixture as directed, increasing water to 1-3/4 cups and adding all of the bell pepper to saucepan. Cook as directed, reducing stand time to 5 minutes. Stir in pesto and serve.
