Mint in the Mix Brownies
Makes 16 brownies

These fudgy brownies with just a hint of mint will disappear right before you eyes!

Ingredients

|
cup (1-1/2 sticks) butter
|
|
4

squares (1 ounce each) semi-sweet chocolate
|
|
1
|
package (3 ounces) cream cheese, softened
|
|
1
|
cup plus 2 tablespoons granulated sugar, divided
|
|
3
|
large eggs, divided
|
|
1
|
cup plus 1 tablespoon all-purpose flour, divided
|
|
1/4
|
teaspoon mint extract
|
|
1/2
|
teaspoon baking powder
|
|
1/4
|
teaspoon salt
|
|
1
|
teaspoon vanilla extract
|

cup "M&M's"® Semi-Sweet Chocolate Mini Baking Bits, divided
|
|
|
Chocolate Glaze (recipe follows)
|

|
Preheat oven to 325°F. Lightly grease 8×8×2-inch baking pan; set aside. In small saucepan melt butter and chocolate over low heat. Remove from heat; set aside. In small bowl beat cream cheese and 2 tablespoons sugar until well blended. Beat in 1 egg, 1 tablespoon flour and mint extract; set aside. In large bowl beat remaining 2 eggs and remaining 1 cup sugar until light; blend in 1 cup flour, baking powder and salt. Stir in chocolate mixture, vanilla and 1/2 cup "M&M's"® Semi-Sweet Chocolate Mini Baking Bits. Spread chocolate mixture in prepared pan. Drop spoonfuls of cream cheese mixture over chocolate mixture; swirl with knife to marble. Bake 50 to 55 minutes or until firm in center. Cool completely on wire rack. Prepare Chocolate Glaze. Drizzle over brownies; sprinkle with remaining 1/2 cup "M&M's"® Semi-Sweet Chocolate Mini Baking Bits. Cut into bars. Store in tightly covered container.

Chocolate Glaze
In small saucepan over low heat combine 4 teaspoons water and 1 tablespoon butter until it comes to a boil. Stir in 4 teaspoons unsweetened cocoa powder. Gradually stir in 1/2 cup powdered sugar until smooth. Remove from heat; stir in 1/4 teaspoon vanilla extract. Let glaze cool slightly.
