Combine soy sauce, mustard, honey, lemon juice and ginger in large glass bowl. Add chicken, turning to coat. Cover; marinate in refrigerator 1 hour. Remove chicken. Place marinade in small saucepan. Bring to a boil over medium-high heat; keep warm. Place chicken on prepared grill, skin sides up, about 8 inches from heat. Grill, turning occasionally, 45 minutes. Grill, basting occasionally with marinade, 15 minutes more or until fork can be inserted into chicken with ease and juices run clear, not pink. Serve with hot rice.
